Cinnamon Pear Crumble with Oats
Bake cinnamon pears under a buttery oat topping. This autumn dessert serves four and takes 15 minutes to prep and 35 minutes to bake. How do you keep the topping crisp? Keep the butter chilled until you need it. Scatter the crumbs evenly and leave them loose. Which pears work best? Choose ripe but firm pears. Very soft ones lose their shape more quickly in the oven. Step-by-Step Method
Dice the pears
Heat a conventional oven to 190 °C (375 °F). Cut 600 g of prepared pears into roughly 1.5 cm cubes. Toss with 10 g brown sugar and 2 g cinnamon and spread in a shallow 20 cm baking dish.
Make the oat topping
Mix 65 g rolled oats, 45 g flour and the remaining 25 g brown sugar. Add 55 g cold butter in cubes. Rub it in with your fingertips until pea-sized clumps form.
Scatter and bake
Scatter the crumbs loosely over the pears. Bake on the middle rack for about 35 minutes, until golden on top, bubbling at the edges and tender when pierced with a knife.
Rest and serve
Set the dish on a wire rack for 10 minutes to let the juices thicken slightly. Divide into four portions and serve warm.
