Heat the oven to 350°F (175°C). Lightly grease a standard loaf pan or line it with parchment so the bread lifts out easily.
Whisk the eggs in a large bowl. Add applesauce, sugar, and vanilla, then whisk until smooth.
In a second bowl, stir together whole wheat flour, all-purpose flour, salt, baking soda, baking powder, and the spices.
Add the dry mix into the wet mix. Fold just until you don’t see dry flour; overmixing can make the loaf dense.
Stir in the shredded zucchini. If it seems very watery, gently squeeze out a little liquid first for a more even texture.
Pour the batter into the pan and level the top. Bake for 50–60 minutes, until a toothpick inserted in the center comes out clean.
Let it cool in the pan for 10 minutes, then transfer to a rack to cool fully before slicing.
