Roughly chop the celery and onion. Grate the fresh ginger and finely zest the lemon.
Add rice vinegar, ketchup, celery, ginger, onion, soy sauce, water, lemon zest, salt, and pepper to a blender. Blend until the texture is very smooth.
If you want it a touch thinner, blend in 1–2 extra tablespoons of water. Taste and adjust salt if needed.
Pour into a jar and chill for at least 15 minutes so the flavors settle. Shake before serving, then drizzle over your salad.
