How to Clean Leeks and Cook Them Gently
Learn to rinse grit from leek layers, cut vegetables evenly and cook them gently in a covered pan. Read cooling and storage advice for dishes containing rice.

Leeks make a welcome November side dish without a complicated sauce. With carrots, a little rice and lemon, careful cleaning and checking doneness matter more than elaborate preparation.
Rinse between the layers
Trim roots and tough tops; split the white and pale green parts lengthwise. Open the layers under running water to remove soil, then drain. Rinsing only the outside may leave grit inside.
Cutting and pan choice
- Cut leeks about 3 cm long and carrots 5 mm thick; thinner carrot slices help both vegetables soften together.
- Use a wide covered pan. Soften the vegetables gently in oil; browning is not the aim for this dish.
Check texture as well as time
A gentle simmer is enough. Shake the pan instead of stirring repeatedly. Rice should have no hard centre and a knife should enter the carrots easily. Add hot water gradually if needed; time alone is not a reliable guide.
Plan cooling when adding rice
Do not leave the rice dish on the counter for hours. Cool leftovers quickly in shallow containers, ideally refrigerate within one hour and eat within 24 hours. Reheat only once.
