How to Thicken Cauliflower Soup: Roasting and Texture Guide

A smooth roasted cauliflower soup with onion and olive oil. This four-serving recipe explains browning, blending and adjusting the texture without cream.

Roasted Cauliflower Soup

Quick answer: control the liquid

For this recipe, set aside 1 litre of water for 800 g trimmed cauliflower. Use 800 ml initially and add the rest after blending. This leaves room to adjust for differences in the vegetables and roasting. Aim for soup that lightly coats a spoon but still flows easily into a bowl.

Why roast the cauliflower first?

Dry the florets and cut them to similar sizes. Spread in one layer so the tray is not crowded. At 220°C, start checking within the 30–35 minute range: golden edges and soft stems matter more than the timer. Use two trays if necessary. Blackened florets are not the goal.

Add water in stages

Combine the roasted vegetables with softened onion and garlic and the smaller amount of water. Check that no firm stems remain before blending. Turn off the heat and keep the immersion blender head beneath the surface. Stir and pause briefly before deciding whether more water is needed.

Fixing the texture

If the soup is too thick, add hot water a little at a time. If too thin, simmer uncovered briefly and stir frequently. For a grainy texture, first check that the vegetables are fully tender, then blend again. Extra oil will not soften an undercooked stem.

Frequently asked questions

Does this soup need cream?

No cream is used here; fully tender vegetables provide body when puréed.

Is the roasting time exact?

No. Floret size and oven performance vary, so check both colour and tenderness.
