Step-by-Step Method

6-step method
01

Trim Beans

Snap off the tips of the Romano flat beans. Slice lengthwise or diagonally into bite-sized pieces.

02

Sauté Aromatics

Heat extra virgin olive oil in a wide pot. Sauté diced onions and garlic cloves until translucent and fragrant.

03

Layer

Add the prepared green beans. Layer the grated fresh tomatoes, sugar, and sea salt over the top.

04

Cover and Simmer

Cover the pot tightly. Cook on medium heat for 5 minutes until tomatoes release their juices, then turn the heat to the lowest setting.

05

Slow Braise

Slowly braise without adding any water for 35-40 minutes until the beans are meltingly tender.

06

Rest and Serve

Turn off heat, drizzle with a tablespoon of raw olive oil, and let cool completely in the pot. Serve at room temperature.

Chef's Tips & Tricks

Slice beans lengthwise or on an angle. Cook covered over very low heat in tomato juices without adding water. Finish with a fresh drizzle of raw olive oil once removed from the stove.
