Step-by-Step Method

8-step method
01

Preliminary preparation

Cut the chicken into thin strips. Chop the garlic and shallot; pick out the shrimps. If you are going to use noodles, boil them according to the package, drain them and keep them aside.

02

Mix the sauce

In a bowl, mix tomato paste, sugar, nampla and white wine until smooth. This way you can add it quickly while cooking.

03

Sauté the chicken

Heat a large skillet or wok. Add the chicken in a single layer and cook, stirring, until it changes color.

04

Add aromas

Place the shallot and garlic on the chicken. Stir for 1–2 minutes, until fragrant; Be careful not to burn the garlic.

05

Cook the shrimp

Add the shrimps. Cook briefly until the color turns pink; If you keep it too long it may harden.

06

Combine with the sauce

Pour the sauce you prepared into the pan. Stir over low-medium heat for a few minutes until the sauce thickens slightly and coats the ingredients.

07

Add noodles and fresh ones

If you are using boiled noodles, add them to the pan and mix well with the sauce. Just before removing from the stove, add the bean sprouts and basil and fry for 30–60 seconds.

08

Serve

Share on plates. Sprinkle coarsely crushed peanuts on top and serve hot.
