Ingredients

Scale:8servings

1 (9 inch/23 cm) homemade pie dough and mold (prepared)

Medium sweet potato (boiled and mashed)
Granulated sugar
Molasses
Egg
Grated nutmeg
Ground ginger
Ground cinnamon
Grated orange peel (only the orange part)
Butter (melted, warmed)
Milk (room temperature)
Evaporated milk (canned evaporated milk)

Step-by-Step Method

7-step method
01

Prepare the oven and base

Preheat the oven to 175°C. Place the pie dough into the mold and smooth the edges; Pierce the base in several places with a fork. (You can pre-cook for 5 minutes if you wish, but it is not necessary unless the stuffing is very liquid.)

02

Mash the sweet potato

Mash the boiled sweet potatoes while they are hot and turn them into puree. If you don't want any lumps to remain, blend them briefly.

03

Mix sugar, molasses and spices

Add granulated sugar and molasses to the puree. Add nutmeg, ginger, cinnamon and orange zest and stir until fragrant.

04

Connect with eggs and oil

Add the eggs one by one and beat with each addition. Add the melted butter and make it homogeneous.

05

Add the milk and open the mixture

Slowly pour in the milk and evaporated milk and mix. The mortar should be fluid but smooth; Mixing without foaming too much will reduce cracking.

06

Fill and bake

Pour the mixture into the pie base. Bake for 21 minutes; If the edges come together and the middle part is slightly wobbly, take it out of the oven. If you overcook it, the top may crack.

07

Rest and serve

Cool the pie completely on a wire rack. Let it rest in the refrigerator for at least 1 hour and slice it; so it doesn't fall apart when cutting.
