1. Ingredients

Onion (finely chopped) (for sauce)
Chicken broth (or vegetable broth)
Flour
Skim milk
(about 225 g) low-fat cheddar cheese (grated)
(about 280 g) fresh spinach (seared, roughly chopped)
(about 200 g) frozen spinach (thawed, well drained) squeezed)

2. 3 sheets of phyllo phyllo (baklava phyllo)

Olive oil (to grease the phyllo)

Step-by-Step Method

9-step method
01

Prepare the oven

Preheat the oven to 180°C. Lightly grease a medium baking dish; Your job becomes easier when placing the dough.

02

Soften the onion

Heat the olive oil in a pot. Add the chopped onion and cook over medium heat for 3-4 minutes, until it softens without changing color.

03

Form the flour sauce

Sprinkle the flour into the pot and stir for 1 minute. Add the chicken broth slowly and whisk until there are no lumps.

04

Thicken with milk

Add the milk and cook, stirring, for 2–3 minutes until the sauce thickens slightly. Remove from stove.

05

Add the spinach

Add fresh spinach and stir until it reduces in volume. Then add the squeezed frozen spinach; Make sure the mixture is not too watery.

06

Mix the cheese

Add most of the grated cheddar (you can reserve some for topping) to the warm mixture and stir until it melts.

07

Place the phyllo in layers

Spread 1 sheet of phyllo dough on the baking tray and apply a little olive oil on it. Repeat the same process for the 2nd and 3rd sheets of dough; If the edges hang outside the container, fold them inward.

08

Add the stuffing

Spread the spinach sauce evenly over the dough. Sprinkle the remaining cheese on top if you reserved it.

09

Cook and let it rest

Bake in the oven for 40–45 minutes, until the top is golden brown and the edges are crispy. Let rest 10 minutes before slicing; so it is cut more smoothly.
