Step-by-Step Method

8-step method
01

Preparing the lentils

Put the lentils in a strainer and wash them thoroughly with cold water. Add lentils and broth to the pot and let it boil.

02

Softening the onion

Heat the olive oil in a separate pot. Add the onions and cook over medium heat for 5-6 minutes, until they soften without coloring.

03

Adding tomato paste and tomatoes

Add tomato paste into the onions and stir for 1 minute until the smell disappears. Then add the tomato; Cook for 2-3 minutes.

04

Spices and bay

Add red pepper, rosemary and bay leaves. Transfer the mixture to the pot with lentils.

05

Boiling

Add salt. Cook over low-medium heat for 25-30 minutes until the lentils start to soften; skim the top foam if necessary.

06

Adding bulgur

Add bulgur to the pot. Cook for another 10-12 minutes; When the bulgur swells and becomes soup-like, go to the next step.

07

Spinach and parsley

Add the spinach and cook for 3-5 minutes until it is just firm. When you turn off the stove, stir in the chopped parsley.

08

Resting and serving

Remove bay leaves. Let the soup rest for 5 minutes; If the consistency is too thick, dilute it with hot water or broth. Sprinkle extra parsley on top and serve.
