Spiced Banana Bread Recipe (Quick Bread)
This spiced banana bread recipe uses ripe mashed bananas, lemon zest, and warm spices like ginger and nutmeg for a cozy quick bread. Mix the dry and wet ingredients, bake until a tester comes out clean, then cool and slice for an easy breakfast or snack.
Ingredients
1. Dry ingredients
2. Wet ingredients
Step-by-Step Method
Prep the oven and pan
Heat the oven to 350°F (175°C). Grease a loaf pan and, if you like, line the bottom with parchment so the loaf releases easily.
Mix the dry ingredients
Whisk flour, baking powder, baking soda, salt, ginger, allspice, and nutmeg in a bowl until evenly combined.
Cream fats and sugar
In another bowl, beat butter and margarine with the sugar for 2–3 minutes. Add eggs one at a time, mixing briefly after each addition.
Add bananas and lemon zest
Stir in the mashed bananas and lemon zest. Mix just until the batter looks uniform; don’t overbeat.
Combine wet and dry
Add the dry mixture in 2–3 additions. Fold until you no longer see streaks of flour; overmixing can make the loaf dense.
Bake
Scrape the batter into the pan and smooth the top. Bake 60–65 minutes; after about 55 minutes, loosely tent with foil if it’s browning too fast. It’s done when a tester comes out clean or with a few crumbs.
Cool and slice
Cool in the pan for 10 minutes, then turn out onto a rack to cool completely. Slice once cooled for neat pieces.
