Step-by-Step Method

6-step method
01

Prepare the sauce in advance

Beat the eggs in a bowl, add the grated cheese and black pepper and mix. We will use this mixture away from the stove to prevent the sauce from curdling.

02

Boil the spaghetti

Boil water in a large pot, salt and add spaghetti. Cook until al dente according to the time on the package. Reserve 1 cup of pasta water before cooking.

03

Saute the bacon and garlic

Heat the pan, add olive oil. Add the bacon and cook over medium heat until the oil is released and golden brown. Fry the garlic for 1 minute, remove the garlic when it smells.

04

Add the pasta to the pan

Transfer the drained spaghetti to the pan with bacon. Reduce the heat or turn it off completely; At this stage, high heat can cook the egg and make it lumpy.

05

Tie it with the egg-cheese mixture

Quickly pour the egg-cheese mixture into the pasta and stir constantly. If the sauce is too thick, add the reserved hot pasta water little by little to achieve a silky consistency.

06

Serve

Place on a plate, sprinkle some more cheese and black pepper on top. Serve while hot.
