Step-by-Step Method
Prep the oven and pan
Heat the oven to 350°F (175–180°C). Grease and flour a 9–10 inch (24–26 cm) cake pan, or line with parchment.
Mix the dry ingredients
Whisk the flour, instant vanilla pudding powder, and salt in a bowl until evenly combined.
Combine the wet ingredients
In another bowl, beat the egg with the sugar briefly. Stir in the oil and vanilla.
Make the batter
Add the dry mix in two additions. Slowly pour in the root beer, stirring on low or folding with a spatula just until the batter comes together; don’t overmix.
Bake
Pour into the pan and bake for about 35 minutes. Check the center with a toothpick; if it comes out clean, it’s done. If the top browns too fast, tent with foil for the last 10 minutes.
Cool and serve
Let the cake rest in the pan for 10 minutes, then turn out to cool completely. Slice and serve plain, or dust lightly with powdered sugar if you like.
