Step-by-Step Method
Preheat the oven and prepare the meat
Set the oven to 160°C. Dry the meat with paper towels; Sprinkle salt and pepper all over.
Seal the meat
Heat the butter and oil in a large thick-bottomed pot or a cast iron pot suitable for a baking dish. Sear the meat for 8–10 minutes until brown on all sides; this step packs the flavor.
Add the onion
Add the onions to the pot and fry for 2–3 minutes. Gently scrape off the tasty bits from the bottom with a spatula.
Stir the sauce
Mix apple juice, mustard, ketchup, oregano and basil. Add lemon juice and apple, stir briefly and pour into the pot.
Slow cook in the oven
Close the lid (or cover tightly with foil). Bake in the oven for 2.5 hours. Check if the meat starts to soften.
Add the sweet potatoes
Place the sweet potatoes in the pot. Cover again and cook for another 30–45 minutes, until both meat and potatoes are tender.
Let rest and serve
Let the meat rest for 10 minutes, then slice against the fibers. Pour the sauce over it; Sprinkle with parsley and serve hot.
