Rhubarb Squares Recipe (Rhubarb Squares)
Rhubarb squares recipe: Prepared with egg-vanilla mixture and rhubarb on a floured, buttered base. How to make: press the base, pour the mixture, bake, cut into squares.
Ingredients
1. For the base
2. For the filling
3. 3 cups rhubarb (freshly chopped; otherwise thawed and drained frozen rhubarb)
Step-by-Step Method
Prepare the oven and mold
Preheat the oven to 175°C. Lightly grease a square baking tray/mold or line it with baking paper.
Mix the base
Combine flour and powdered sugar in a bowl. Add the cold butter and rub it into crumbs with your fingertips.
Press and pre-bake the base
Press the mixture evenly into the bottom of the mold. Bake for 12–15 minutes, until the edges are lightly browned.
Beat the filling
Mix granulated sugar and 1/4 cup flour. Add the eggs and beat until smooth, add the vanilla.
Add the rhubarb
Add the chopped rhubarb to the mixture and mix gently with a spatula. If you are using frozen rhubarb, drain excess water so that the base does not get wet.
Combine and bake
Pour the mixture onto the hot base and smooth it out. Bake for 28–35 minutes, until the center is set.
Cool and cut into squares
Cool the mold completely on a wire rack. For clearer slices, let them rest in the refrigerator for 30 minutes and cut them into squares.
