Step-by-Step Method

8-step method
01

Prepare the oven and the bowl

Preheat the oven to 180°C. Lightly grease a medium square baking dish; so the slices come out easily.

02

Make the crumb mixture

Mix flour, oatmeal, brown sugar and cinnamon in a bowl. Add the margarine and rub it with your fingertips until a sand-like crumbly texture forms.

03

Press the base

Press about half of the crumb mixture evenly into the bottom of the baking pan with a spreader and spoon. Reserve the remaining crumbs for the top.

04

Bake the rhubarb mixture

Mix water and granulated sugar in the pot. Add corn starch and beat until there are no lumps. Cook over medium heat, stirring constantly, until it thickens.

05

Add vanilla and rhubarb

When you remove it from the stove, add the vanilla. Add the chopped rhubarb to the mixture and mix gently with a spatula; Don't let the rhubarb pieces fall apart.

06

Form the layers

Pour the rhubarb filling onto the pressed base and flatten it. Sprinkle the crumbs you reserved over it, evenly.

07

Bake

Put the tray in the oven. Bake until top is lightly browned and filling is bubbly around edges, about 60 minutes; If the top browns early, cover it loosely with foil.

08

Rest and slice

After taking it out of the oven, let it sit at room temperature for at least 30 minutes. When it gets warm, it slices more evenly; If you want, serve it with plain ice cream or yoghurt.
