Step-by-Step Method
Preheat and prep the pan
Heat the oven to 350°F (175°C). Grease and flour a loaf pan, or line it with parchment.
Combine the dry mix
In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon until evenly blended.
Whisk the wet ingredients
In a second bowl, whisk the eggs and sugar for 1–2 minutes. Stir in the vanilla.
Prep the pears
If you like, toss the diced pears with 2 tablespoons flour to help prevent sinking.
Make the batter
Pour the wet mixture into the dry ingredients. Fold gently just until you don’t see dry flour; don’t overmix.
Fold in the pears
Add the pears and fold until they’re spread through the batter.
Bake
Spoon the batter into the pan. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
Cool and slice
Let the loaf rest in the pan for 10 minutes, then turn it out onto a rack to cool fully before slicing.
