Step-by-Step Method
Prepare the potato
Boil the potato and peel it. Puree it while it is hot, so that there are no lumps left; let it cool down.
Wake up the yeast
Take the warm milk in a bowl. Add 2 tablespoons of sugar and active dry yeast and mix. Wait for it to foam for 5–10 minutes.
Mix the dough
In a large bowl, combine mashed potatoes, salt, melted butter, eggs, and 3/4 cup sugar. Add yeast milk and mix until homogeneous.
Add the flour and knead
Add the flour little by little. Knead for 8–10 minutes until you obtain a soft dough that is not sticky; Adjust the amount of flour with small touches if necessary.
First fermentation
Place the dough in a lightly oiled bowl. Cover it and let it sit in a warm place for about 1 hour, until its volume increases significantly.
Shape and second fermentation
Gently deflate the dough. Make single loaves or small rolls. Arrange on tray and cover again; Let it rise for 30-45 minutes.
Bake
Preheat the oven to 180°C. Bake the bread for 25–30 minutes, until the top is golden brown. Let it rest on the tray for 10 minutes and put it on a wire rack.
Serve
Slice while it's warm. Serve plain or with jam or butter; When it cools down completely, put it in a storage container.
