6-step method
01

Prep

Soak Baldo rice in warm salted water for 20 minutes, then drain thoroughly. Plump the currants in warm water.

02

Sauté Aromatics

Melt farm butter with a splash of olive oil in a wide shallow pan. Sauté pine nuts until lightly golden, then add finely diced yellow onions and cook until translucent.

03

Toast Rice

Add the drained rice. Toast gently for 4-5 minutes, stirring continuously until the grains become pearly and translucent.

04

Spice and Simmer

Stir in the drained currants, ground cinnamon, black pepper, and salt. Pour in 3 cups of boiling water or light broth.

05

Add Chestnuts

Arrange the whole roasted chestnuts over the rice. Cover tightly and simmer over low heat for 15 minutes until liquid is fully absorbed.

06

Rest and Garnish

Remove from heat, place a clean towel under the lid, and let rest for 15 minutes. Fluff gently and garnish with fresh dill.

Chef's Tips & Tricks

Soak the rice in warm salted water for 20 minutes to achieve fluffy, separate grains. Fold in the pre-roasted chestnuts during the steaming phase so they retain their shape.
