Step-by-Step Method
Preheat the oven
Heat the oven to 180°C / 350°F. If you’re using a ready pie crust, have it set in the pan and ready to fill.
Make a smooth slurry
In a saucepan, whisk the cornstarch into the water until it’s fully dissolved. This helps the filling thicken evenly.
Cook raisins and sugar
Add the raisins and brown sugar. Simmer over medium heat for 8–12 minutes, stirring often, until the mixture noticeably thickens.
Finish with lemon and fats
Stir in lemon juice, butter, and margarine. Once melted and glossy, turn off the heat.
Fold in the walnuts
Add the chopped walnuts and mix. Let the filling sit for 5 minutes so it’s not piping hot when it hits the crust.
Fill the pie
Pour the filling into the pie crust and level the top. If using a top crust, cover and cut a few small vents to release steam.
Bake
Bake for 30–35 minutes, until the crust is lightly golden and the filling is bubbling near the edges.
Cool, then slice
Cool at room temperature for at least 1 hour so the filling sets up. Slice into 6 pieces and serve.
