Ingredients
1. For the dough
2. 1 tablespoon rum
Step-by-Step Method
Prepare the oven
Preheat the oven to 180°C. Lay baking paper on the tray; so the cookies can be separated easily.
Whisk the wet mixture
Mix egg, honey and brown sugar in a bowl for 1–2 minutes. Add lemon juice and lemon zest and whisk briefly.
Combine the dry ingredients
Blend flour, baking soda, nutmeg, cinnamon, allspice and cloves in a separate bowl. Just stir it with a spoon to avoid any lumps.
Gather the dough
Add the dry mixture to the wet mixture, batch by batch. When the dough thickens, add the citron pieces.
Adjust the consistency
Add rum and water slowly and bring the dough to a shapeable consistency that does not stick to the hand. If it is too runny, add 1-2 spoons of flour.
Shape
Take walnut-sized pieces from the dough, roll them and place them on the tray, spaced apart. If desired, flatten by lightly pressing.
Bake
Bake in the preheated oven for 10–12 minutes. It comes off when the edges become slightly colored; If you keep it too long it may harden.
Cover with powdered sugar
Once the cookies have cooled down, serve them by rolling them in powdered sugar. If you cover it before it cools completely, the sugar will stick better.
