Step-by-Step Method
Prep the pan
Line an 8-inch (20 cm) square pan with parchment paper. This makes it easy to lift the fudge out and cut clean squares.
Bring the base to a boil
In a medium saucepan, combine butter, margarine, evaporated milk, sugar, and salt. Heat over medium, stirring until the sugar dissolves, then bring to a steady boil.
Cook to thicken
Lower to medium-low. Cook for about 8–10 minutes, stirring now and then so it doesn’t scorch; the mixture should look slightly thicker.
Melt in the marshmallows
Remove the pan from the heat. Add the miniature marshmallows and stir briskly until they melt and the mixture turns glossy and thicker.
Fold in walnuts
Stir in the finely chopped walnuts. If you like, hold back some of the coarse walnuts to sprinkle on top before it sets.
Pour and cool
Pour into the prepared pan and smooth the surface. Let it cool at room temperature for 1–2 hours, then chill 30 minutes for sharper cuts.
Slice and store
Lift out using the parchment and cut into squares. Store in an airtight container; lightly greasing the knife helps keep the cuts neat.
