Step-by-Step Method
Heat the oven and prep the apples
Preheat the oven to 180°C / 350°F. Wash the apples. Slice a thin “lid” off the top and core them, keeping the bottom intact so the filling stays put.
Add lemon
Drizzle lemon juice over the cut surfaces and inside the cavities. This helps prevent browning and keeps the flavor bright.
Fill with currants
Divide the currants between the apples. Keep the filling loose so it can plump as it bakes.
Mix the maple-spice sauce
In a small bowl, stir together maple syrup, cinnamon, and ground cloves. If you want a thinner sauce for spooning, mix in 2–3 tablespoons water.
Bake until tender
Set the apples in a baking dish. Spoon some sauce into each cavity and over the tops, then pour the rest into the dish. Bake for about 45 minutes, until a knife slides in easily.
Rest and serve
Let the apples sit for 5 minutes. Spoon the warm pan syrup over each apple when serving.
