2. For wet ingredients
3. For serving and layering (practical suggestion)
Step-by-Step Method
Prepare the oven and tray
Preheat oven to 175°C. Grease a square tray (approximately 20x20 cm) and line the bottom with baking paper; So you can easily remove the bars.
Combine the dry mixture
Mix 1 3/4 cups flour, 2 cups flour, baking powder, salt and cinnamon in a bowl. If there are lumps, break them up with a short fork.
Make the oil and sugar sandy
Add cold butter and margarine, along with granulated sugar and brown sugar. Crumble the mixture with your hand or work with a dough cutter to bring the mixture to a sandy-crumb consistency.
Add the syrup and egg
Add dark corn syrup and half the beaten egg. Mix until dough comes together; Don't knead too much, just let it come together.
Press the base
Place about 2/3 of the dough on the tray. Create an evenly thick base by pressing with your fingertips or a spatula.
Spread the jam
Spread the jam over the base in a thin and even layer. Let it come to the edges, but don't overflow it.
Sprinkle the top crumb
Tear the remaining dough into pieces with your hands and spread them over the jam like crumbs. Thus, the linzer bar appearance is created.
Bake and cool
Bake for 30 minutes, until lightly browned on top. Cool completely on the tray; Then take it off the paper and cut it into 12 slices. Resting it in the refrigerator for 10 minutes before cutting will give clearer slices.
