Lemon Cake Recipe (Easy Lemon Glaze)
Lemon cake recipe: A simple, oven-baked cake made with eggs, neutral oil, water, confectioners’ sugar, and lemon juice. Once the cake cools slightly, drizzle a quick lemon powdered-sugar glaze on top so it sets nicely and keeps the crumb moist. The ingredients and how to make steps are kept short and practical.
Ingredients
1. For the cake
2. For the lemon powdered sugar glaze
Step-by-Step Method
Preheat and prep the pan
Heat the oven to 350°F (175°C). Grease your cake pan; lining the bottom with a small circle of parchment helps with clean release.
Whisk the eggs
In a large bowl, whisk the eggs for 1–2 minutes until smooth and uniform.
Add the liquids
Pour in the oil and water and mix briefly. Stir in the lemon juice and whisk just until combined.
Fill the pan
Transfer the batter to the prepared pan. Level the top lightly with a spatula so it bakes evenly.
Bake
Bake for about 40 minutes. Check with a toothpick; if it comes out clean, it’s ready. If not, add 5 minutes and recheck.
Mix the glaze
Add confectioners’ sugar to a bowl. Stir in lemon juice a little at a time until you get a thick but pourable glaze.
Glaze and rest
Let the cake cool slightly, then drizzle the glaze over the top. Wait 10–15 minutes for it to set before slicing.
