Bay leaf
Bay leaf
Beef cubes (stew/beef stew)
Large yellow onion, diced
Garlic, crushed or finely chopped
Dried thyme
Dried rosemary
Flour (all-purpose)
Chopped parsley
Carrots, chopped into rings
Water or broth

Step-by-Step Method

6-step method
01

Prepare and seal the meat

Dry the beef cubes with paper towels. Heat the pot, add the olive oil and sear the meat, batch by batch, in a single layer over high heat. When the outside of the meat acquires color, transfer it to a plate.

02

Sauté the onion and garlic

Add the onion to the same pot, stir for 5-6 minutes until it softens. Add the garlic, stir for 30-40 seconds until fragrant.

03

Add flour and spices

Sprinkle the flour into the pot and fry for 1 minute; This step assembles the sauce. Add thyme, rosemary and bay leaves and stir briefly.

04

Cook for a long time on low heat

Return the sealed meat to the pot. Add enough water or broth to cover very lightly (start with 1/2 cup and adjust as it cooks, if necessary). When it boils, reduce the heat, close the lid and cook slowly for about 90 minutes.

05

Add the carrots and soften

Add the carrots to the pot and cook for another 25-30 minutes. If the meat falls apart easily and the carrots become soft, the consistency is ready; You can add some more water if necessary.

06

Final touch and service

Remove bay leaves. Add parsley and let it rest for 1-2 minutes. Serve hot; It goes well with bread or mashed potatoes.
