Step-by-Step Method
Bloom the yeast
Pour the warm water into a bowl. Stir in the dry yeast and sugar, then let it sit 5–10 minutes until foamy.
Mix and knead the dough
Add the salt. Work in the flour little by little and knead until you have a soft dough; use a small splash of the extra water only if it feels too dry.
Let it rise
Place the dough in a lightly oiled bowl and cover. Let it rise 45–60 minutes, until noticeably puffed.
Roll out
Heat the oven to 200°C. Lightly flour the counter and roll the dough into a rectangle.
Add the filling
Spread a thin layer of tomato sauce over the dough. Layer on mozzarella and ham evenly, leaving a 2–3 cm border around the edges.
Roll and seal
Starting from the long side, roll the dough up snugly. Pinch the seam and ends closed, then place seam-side down.
Bake
Transfer to a parchment-lined tray. Cut 2–3 small slits on top for steam. Bake about 25–30 minutes, until golden.
Rest and slice
Let it cool 5–10 minutes so the cheese sets a bit, then slice and serve warm. Offer extra tomato sauce on the side if you like.
