Ingredients

Scale:1servings

1. Ingredients

(120 g) all-purpose flour (for the dough)
(120 g) all-purpose flour
Granulated sugar
Salt
(55 g) cold butter, cut into small cubes
Ice-cold water

2. Filling and topping

Jam or preserves (strawberry, apricot, etc.)
Small egg yolk + 1 water
Optional icing: 3 powdered sugar + 1–2 teaspoons milk/water
Vanilla, a pinch of sprinkles (optional)

Step-by-Step Method

5-step method
01

Make and chill the dough

Mix flour, sugar, and salt. Cut in the cold butter until it looks like coarse crumbs. Add ice-cold water a little at a time just until the dough comes together. Wrap and chill for 15 minutes.

02

Roll and portion

Heat the oven to 180°C / 350°F. On a lightly floured surface, roll the dough into a thin rectangle. Cut into two equal rectangles and tidy the edges so they match.

03

Fill and seal

Spoon the jam onto the center of the bottom piece, leaving a 1 cm border. Brush the border with the egg yolk wash. Place the top piece over it and press the edges firmly with a fork. Poke a few small steam holes on top.

04

Bake

Transfer to a parchment-lined tray. Bake for 20–25 minutes, until lightly golden. Let it rest on the tray for 10 minutes so the filling sets a bit.

05

Add icing (optional)

Stir powdered sugar with milk/water to a thick but spreadable glaze; add vanilla if you like. Spread over the warm (not hot) pastry and add sprinkles right away. Slice once fully cooled.
