Ingredients
For the dough
Step-by-Step Method
Prepare the yeast
Add crushed fresh yeast and sugar into warm water and mix. Let it sit for 5 minutes; It is enough to see light foaming on the surface.
Mix dry ingredients
Mix the flour, baking powder and salt in a large bowl. Just stir briefly to avoid any lumps.
Form the dough
Slowly pour the yeast water into the dry mixture and whisk. Aim for a runny, thick crepe batter consistency; If it is too thick, add 1–2 tablespoons of water.
Let it prove
Cover the bowl and let it sit at room temperature for about 60 minutes. The dough should rise and small bubbles should form on it.
Prepare the pan and rings
Heat the nonstick pan over medium-low heat. If using metal rings for crumpets, lightly oil them; Otherwise, you can also bake it by pouring it into small rounds.
Bake crumpets
Pour the dough into rings (about 1–1.5 cm thick). Bake until many pores appear on the top surface and the surface becomes matte. When the bottom is browned, remove the ring, turn it briefly if necessary and hold the other side for 30–60 seconds; Be careful not to burn it.
Serve
Warm the crumpets. Serve with butter, honey or jam; If you want, you can lightly toast it so that the pores can hold the sauce better.
