Step-by-Step Method
Prepare jar
Choose a clean and dry jar, preferably glass. If the lid is metal, keep the inner surface clean so that it does not come into contact with vinegar for a long time; If you wish, you can put wax paper in between.
Arrange herbs
Place thyme, rosemary, bay, oregano and basil loosely in the jar. Lightly crush the garlic and add; this helps the flavor come out faster.
Add seasoning
Sprinkle black pepper into the jar. If you want, you can crack the black pepper slightly for a more intense flavor.
Pour vinegar
Pour the white wine vinegar into the jar. Let all herbs remain completely submerged in the liquid; top with extra vinegar if necessary.
Steep
Close the jar and leave it in a cool, dark place for 1–2 weeks. Gently rotate the jar every 2–3 days to mix the flavors.
Strain and store
Strain the vinegar through a fine strainer or cheesecloth. Pour it into a clean bottle and close the cap. You can use it in salad dressing, marinade or pickled vegetables.
