This Greek spinach pastry triangles recipe is prepared by placing spinach, feta cheese and a cream cheese filling between layers of phyllo. Its ingredients are few, its construction is practical; It is ideal for parties, invitations and tea time with a size of 50 pieces. In the how-to section, there are small tips for working the dough without drying out and cooking it evenly.
Ingredients
1. For the filling
2. For the topping
Step-by-Step Method
Prepare the spinach
Thaw frozen spinach completely. Extract the juice by squeezing handfuls; This step is important so that the filling does not remain watery.
Mix the filling
In a large bowl, mix the spinach, egg, finely chopped onion, cream cheese, crumbled feta/white cheese and black pepper until no lumps remain.
Prepare the oven and tray
Preheat the oven to 180°C. Cover the tray with wax paper or lightly oil it.
Work the phyllo dough before it dries
Place the phyllo dough on the counter and cover it with a clean, slightly damp cloth. This way, the dough does not crack and is easy to wrap.
Prepare the butter mixture
Mix melted butter and margarine in a bowl. Use a brush to oil each coat with a thin layer.
Cut the strips
Roll out 1 sheet of phyllo, oil it thinly and place the second sheet on top. Cut these two layers into long strips (about 6–7 cm wide is practical).
Wrap the triangles
Place 1 teaspoon of filling on the end of each strip. Fold the end into a triangle and continue folding the strip into a triangle.
Arrange on the tray and oil
Place the triangles on the tray, spaced apart. Lightly brush the tops with the remaining oil; This way they fry more evenly.
Cook
Bake in the preheated oven for 45–60 minutes, until golden brown. If you turn the tray in half the time, the color will be more even.
Rest and serve
Remove from oven, let rest for 5–10 minutes. You can serve it warm or at room temperature.
