Ingredients

Granulated sugar
Butter
Vinegar
Water
Fine salt (optional, balances the taste)
Little butter or neutral oil to grease the mold

Step-by-Step Method

7-step method
01

Prepare the mold

Lightly oil a small tray or a 15–20 cm heatproof bowl. This way, the toffee comes out easily when it cools.

02

Start melting the sugar

Take granulated sugar and water in a medium-sized, thick-bottomed pot. Heat over medium heat, shaking the pot gently until the sugar dissolves; Keep stirring to a minimum to reduce crystallization.

03

Add butter and vinegar

When the sugar melts completely, add the butter and vinegar. Stir briefly with a spatula until the butter melts and mixes into the mixture.

04

Cook until caramel color

Let the mixture boil. Cook until the color changes to light amber; Meanwhile, control the fire so it doesn't burn. If you want, use a wet brush to remove the sugar accumulated on the edges.

05

Check consistency

Place a very small drop on a plate. If it hardens quickly and becomes brittle, the consistency is OK; If it remains soft, cook for another 1–2 minutes.

06

Pour and cool

Carefully pour the hot toffee into the prepared bowl. Leave it at room temperature until it cools completely and hardens; If you are in a hurry, you can let it rest in the refrigerator for 10-15 minutes.

07

Break and serve

Take the toffee out of the mold and break it into pieces. Store in an airtight jar; Moisture can soften the texture of the fudge.
