German Spätzle Recipe (Homemade Egg Noodles)
This German Spätzle recipe is a soft noodle prepared by cooking egg dough in boiling water for a short time. If you are wondering how to make spätzle, simply prepare the dough with the basic ingredients and drop it into water with a spoon or a grater-like device. Turn it with butter and serve hot.
Ingredients
1. For the dough
2. For serving
Step-by-Step Method
Prepare the water
Bring plenty of water to the boil in a large pot and lightly salt it. When the spätzle dough is ready, you will pour it directly into this boiling water.
Mix the dough
Beat the eggs in a bowl. Add the flour and salt, then pour the milk slowly to obtain a smooth, fluid but thick dough. Letting it rest for 2 minutes will make the job easier.
Drop the dough into the water
Drop the dough by pushing it into the boiling water through a spätzle grater, perforated colander or large-hole grater. If there is no apparatus, you can drop the dough into small pieces with a spoon into the water.
Cook and take it out
Spätzles are usually cooked within 1-2 minutes when they float to the surface of the water. Take it with a colander and strain it. Continue in the same way until all the dough is used.
Turn it with butter
Place the drained spätzle in a hot pan, add the butter and fry gently for 1-2 minutes. Now it's ready to serve.
Serve
Serve hot. If you want, you can sprinkle a little black pepper on it and serve it with meat dishes or sauces.
