Step-by-Step Method
Prepare the flavorings
Grate or finely chop the ginger. Crush the garlic, chop the onion finely. Cut the chicken into cubes and dry lightly with paper towels.
Caramelize the sugar
Place a large pan over medium heat. Sprinkle the sugar into the pan and stir until it melts and turns a light caramel color; Be careful not to darken it too much.
Seal the chicken
Add the chicken to the caramel. Cook for 3–4 minutes, turning, until brown; The caramel will stick to the chicken and coat it.
Add onion, garlic and ginger
Add the onion, garlic and ginger to the pan. Stir and sauté for 1–2 minutes until the smell disappears.
Make the sauce
Add dark soy sauce and fish sauce. Sprinkle with black pepper, add salt sparingly (sauces may be salty).
Thicken over low heat
Reduce the heat. Stir occasionally for 10–12 minutes until the chicken is cooked and the sauce becomes glossy and slightly thick. If necessary, add a few tablespoons of water and thicken again.
Serve
Turn off the heat and let it rest for 2 minutes. Serve hot; It goes well with rice or plain vegetables.
