01

Prepare the oven and mold

Preheat the oven to 175°C. Grease the loaf cake mold and, if desired, line the bottom with baking paper.

02

Combine dry mixture

Mix flour, cinnamon, baking powder, baking soda and salt in a bowl. Don't leave any lumps.

03

Whisk wet ingredients

Whisk sugar, egg and vanilla briefly in a separate bowl. Add honey, marmalade, yoghurt, applesauce, lemon juice and orange and mix.

04

Form dough

Add the dry mixture to the wet mixture. Mix with spatula until just combined; Don't over mix.

05

Add fruits, vegetables and add-ins

Add all the fruits and vegetables (apple, banana, carrot, zucchini, etc.) along with the walnuts and mix gently. Straining the watery ones stabilizes the dough.

06

Bake

Pour the dough into the mold and smooth the top. Bake for 60 minutes; If the toothpick you inserted into the center comes out clean, it is ready.

07

Rest and slice

Leave it in the mold for 10–15 minutes, then transfer it to a wire rack and cool completely. When it cools down, slice it and serve.
