Freezer Apricot Jam Recipe (No-Cook)
This freezer apricot jam recipe lets you prep ripe apricots with sugar and lemon in a short time, then portion it into jars for the freezer. There’s no stove time—just mix, let it sit so the sugar dissolves, and freeze. For a smoother spread, mash the fruit more; for a chunkier jam, leave a few pieces.

Step-by-Step Method
Prep and mash the apricots
Pit the apricots. In a mixing bowl, mash them with a fork or potato masher until you like the texture.
Stir in lemon and sugar
Add the lemon juice and lemon zest. Pour in the sugar and mix for 1–2 minutes so the sugar starts dissolving into the fruit.
Adjust with water
Add the water gradually and stir again. If you want it thicker, hold back a little water and check the consistency.
Let it rest
Cover the bowl and let the mixture sit at room temperature for about 20–30 minutes, stirring once or twice to help the sugar melt.
Jar and freeze
Spoon into clean, dry jars, leaving a little headspace. Close the lids and freeze. To use, thaw a jar in the fridge; once opened, keep it refrigerated.
