Easy Homemade Croissants Recipe
This easy croissants recipe uses a simple yeasted dough that’s chilled, then folded with cold butter to build light layers. You’ll find the ingredients, how to make them step by step, and a few practical shaping tips for a cozy breakfast or brunch bake.
Ingredients
1. For the dough
2. For the butter block
3. For brushing
Step-by-Step Method
Mix the dough
Combine warm milk, sugar, and flour in a bowl. Add salt, then mix in the beaten egg and knead until you get a smooth dough.
Rest and chill
Cover the dough and let it rest briefly, then chill it well in the fridge. Cold dough is much easier to roll and fold.
Prepare the butter
Flatten cold butter between two sheets of parchment into a neat rectangle. Keep it cool so it doesn’t melt into the dough.
Laminate (fold the butter in)
Roll the dough out on a lightly floured surface. Place the butter in the center, fold the dough over like an envelope, then roll and fold for a few turns, chilling between turns as needed.
Shape the croissants
Roll the dough out, cut triangles, and roll each one up from the wide end to the tip. Set them on a tray with the tip tucked underneath.
Proof
Cover and let the croissants rise until slightly puffy. If your kitchen is cool, give them extra time.
Egg wash and bake
Brush with beaten egg. Bake in a preheated oven until deeply golden, then cool on a rack for about 5 minutes before serving.
