Step-by-Step Method
Prepare the oven and mold
Preheat the oven to 160°C. Grease an approximately 23x33 cm baking tray/tray or line it with baking paper; so you can remove the squares more easily.
Mix the base
Mix cracker crumbs with melted butter in a bowl. Add a small portion of the sugar (about 2–3 tablespoons) to the base and mix.
Press the base
Pour the mixture into the mold. Make a flat and firm base by pressing it with the bottom of a glass.
Beat the cream cheese filling
Beat room temperature cream cheese until smooth. Add the remaining sugar and mix again. Add eggs one by one; beat briefly after each addition. Add vanilla and combine one last time with a spatula.
Pour the filling
Pour the cream cheese mixture over the base and smooth the surface with a spatula. You can tap the mold on the counter a few times to reduce air bubbles.
Bake
Bake in the preheated oven for about 50–60 minutes. When the edges come together and the middle part jiggles slightly, take it out of the oven; If you overcook it it may crack.
Cool and rest
Cool the mold at room temperature for 30–45 minutes. Then cover it and let it rest in the refrigerator for at least 2 hours (preferably longer); This step makes slicing easier.
Slice and serve
Slice the cooled dessert into 24 squares. Add fresh fruit on top just before serving; If you want, you can also fry the fruits for a short time with a little sugar and use them as a sauce.
