Curried Crab Salad Recipe (In Belgian Endive Spears)

This curried crab salad recipe mixes mayonnaise, finely chopped celery and onion, curry powder, and fresh cilantro, then gets spooned into crisp Belgian endive leaves. It’s quick to prep and even better after a short chill so the flavors settle. Serve it as a light starter or an easy party bite.

Ingredients

Mayonnaise
Celery stalks, finely diced
Small onions (or 1 small yellow onion), finely chopped
Curry Powder
1 head Belgian endive, leaves separated and rinsed
Fresh cilantro, finely chopped
2 cups cooked crab meat, picked over and kept in chunks

Step-by-Step Method

6-step method
01

Mix the base

In a bowl, combine the mayonnaise, diced celery, and chopped onion. Sprinkle in the curry powder and stir until evenly blended.

02

Fold in the crab

Add the crab meat and gently fold so you don’t break it up too much. You want nice bite-size pieces.

03

Finish with cilantro

Stir in the chopped cilantro. Taste and adjust by adding a tiny pinch more curry if you like, keeping it balanced.

04

Chill briefly

Cover and refrigerate for at least 30 minutes. If you can wait 1–2 hours, the flavor comes together more smoothly.

05

Fill the endive leaves

Pat the endive leaves dry. Spoon 1–2 tablespoons of the crab mixture into each leaf.

06

Serve

Serve right away, or keep chilled until you’re ready. For crisp leaves, fill them close to serving time.
