Step-by-Step Method
Boil the pasta
Boil pasta in salted boiling water according to package instructions. You can reserve 1–2 ladles of pasta water to dilute the sauce before straining.
Heat the pan
Heat olive oil and butter in a large pan over medium heat. When the oil is hot, add the garlic and fry for 30–45 seconds until fragrant; Be careful not to discolour.
Cook the shrimp
Add the shrimp to the pan. Cook, stirring frequently, for 2–3 minutes, until pink and opaque. If you keep it too long it may harden.
Deglaze with wine
Add the white wine, scrape the flavor from the pan with a spatula and stir. Boil for 1-2 minutes and let it cool a bit.
Adjust sauce
Add water (or some of the reserved pasta water) and cook for 1 more minute. Keep the consistency slightly fluid; It wraps pasta beautifully.
Add parsley and cheese
Turn down the heat. Stir in the parsley, then add the parmesan cheese and stir briefly until it melts.
Combine with pasta and serve
Add the boiled pasta to the pan and stir with the sauce for 30–60 seconds. Tighten the sauce by adding a little more pasta water if necessary. Serve hot.
