Step-by-Step Method
Finish preparation
If the brown rice is hot, spread it and cool it for 5 minutes; so it doesn't clump in the pan. Keep the white part of the spring onion separate and the green part separate.
Prepare the chicken sauté
Heat a large skillet or wok over high heat. Add half the oil, add the chicken and cook for 3-4 minutes, turning until it changes color.
Add aroma
Add the white part of the spring onion (and the garlic, if using) to the pan. Stir and stir for 30–45 seconds until fragrant.
Roast with rice
Add the remaining oil and add the cooled brown rice to the pan. Fry quickly for 1-2 minutes until the grains remain.
Toss with sauce
Pour soy sauce into the pan. Mix for 1 more minute; Let the rice absorb the sauce but not become mushy. If necessary, add a little water and evaporate immediately.
Final touch and service
Add the green part of the spring onion and black pepper. Taste, adjust the salt and serve hot.
