Step-by-Step Method

7-step method
01

Prep the ingredients

Slice the mushrooms and finely chop the garlic. Keep the broccoli frozen; it will heat through in the sauce.

02

Sear the chicken

Season the chicken with salt and black pepper. Heat the olive oil and half the butter in a skillet, then sear the chicken 3–4 minutes per side until lightly browned.

03

Sauté mushrooms and garlic

Move the chicken to a plate. In the same pan, sauté the mushrooms for 2–3 minutes. Add the garlic and stir briefly until fragrant.

04

Build the pan sauce

Pour in the white wine and lemon juice. Scrape up the browned bits and simmer 4–5 minutes to reduce slightly.

05

Add broccoli and prosciutto

Stir in the frozen broccoli and the thin slices of cured pork. Cook 3–4 minutes so the broccoli heats and the sauce tightens.

06

Finish with cheese

Return the chicken to the skillet. Add the remaining butter and spoon sauce over the top. Sprinkle on the mixed cheese, cover, and cook 4–6 minutes until the cheese melts and the chicken is cooked through.

07

Serve

Plate the chicken and spoon the sauce over it. If you like, serve with a simple salad or plain pasta.
