Step-by-Step Method
Prepare the chicken and flour it
Dry the chicken thighs with paper towels. Sprinkle with salt and pepper and dredge lightly on all sides with flour; Shake off excess flour to prevent the sauce from clumping.
Seal
Heat a large pot over medium-high heat, add the olive oil. Add the chicken in batches and fry for 3–4 minutes on each side; The aim is not to cook the inside, but to give color. Place the chicken on a plate.
Saute the vegetables
Add onion and leek to the same pot, fry for 3-4 minutes until softened. Add the mushrooms and cook for another 4-5 minutes until they release their water. Add the garlic and stir for 30 seconds until fragrant.
Defrost the pot with wine
Pour in the white wine and scrape up any tasty bits from the bottom of the pot with a wooden spoon. Boil gently for 2–3 minutes.
Add tomatoes and herbs
Add whole tomatoes (if large, break them up lightly with a spoon). Put the thyme and rosemary in the pot and stir the sauce.
Put the chicken back and cook
Return the chicken and its accumulated juices to the pot. When it boils, reduce the heat, open the lid and cook over low heat for 30–35 minutes; Let the sauce thicken slightly.
Final setting and serving
Remove weed branches. Taste the sauce; Add salt/pepper if necessary. Serve hot; It goes well with rice, mashed potatoes or pasta.
