Step-by-Step Method

6-step method
01

Preheat the oven

Set the oven to 190°C. Cover a baking tray with baking paper or lightly oil it to prevent the bread from sticking.

02

Prepare the tomato mixture

Mix cherry tomatoes, spring onions, parsley and rosemary in a bowl. Add 1/3 cup olive oil and grated garlic; Lightly salt and mix. Leave it aside for 10 minutes and let the flavors recover.

03

Toast the bread

Arrange the bread slices on the tray. Drizzle olive oil over them and lightly oil both sides. Roast in the oven for 8–10 minutes; Turn it in half the time so that it gets an even color.

04

Season with garlic

While the bread is warm and slightly crispy, rub the cut garlic cloves over the surface of the bread. Applying the garlic without pressing it prevents it from becoming bitter.

05

Melt the cheese

Place provolone cheese on each slice. Sprinkle parmesan on top. Put it back in the oven and cook for 3-5 minutes until the cheese melts; If you want, you can lightly fry it on the grill setting for a short time.

06

Fill and serve

As soon as it comes out of the oven, spread the tomato mixture on the cheese bread with a spoon. Wait 1-2 minutes for the sauce to transfer to the bread and serve hot.
