Ingredients
1. Filling mix
2. 1/2 cup dark rum (optional)
3. Base (recommendation, for classic result)
4. Serving (optional)
Step-by-Step Method
Prepare the oven and mold
Preheat the oven to 175°C. If you are using a ready-made base, place the mold on the counter; If you are making a homemade base, you can press the biscuit base into the mold and pre-bake it for 5-7 minutes.
Mix the filling mixture
In a large bowl, whisk condensed milk, sour cream, and sugar until smooth. Then add lime juice and lime zest; stir for a short time.
Add coconut and rum
Fold the grated coconut into the mixture. If you are using it, add rum and mix with a spatula until homogeneous.
Pour into the base
Pour the filling mixture over the base and smooth the top with a spatula. Make sure it spreads evenly to the edges.
Bake until thickened
Place the mold in the oven and bake for 18–22 minutes. It's done when the middle jiggles slightly; If you overcook it, it may crack.
Cool and rest
Cool it on the counter for 30 minutes, then put it in the refrigerator and let it rest for at least 4 hours (preferably 1 night). This way the slices come out more smoothly.
Serve
Slice and serve with a lime wedge or extra zest. The flavors come through more clearly when served cold.
