Blueberry Oatmeal Muffins Recipe (Blueberry Oatmeal Muffins)

This blueberry oatmeal muffin recipe gives a more balanced texture with yogurt and oats. You mix the ingredients and put it in the oven in a short time; Muffins that are soft on the inside and lightly browned on the top come out. In the how-to section, be careful not to overmix the dough; this preserves the fluff and texture.

01

Prepare oven and mold

Preheat the oven to 180°C. Grease the muffin mold or place paper capsules.

02

Mix dry ingredients

In a bowl, mix flour, oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt with a wire whisk.

Prepare liquid mixture

Beat the eggs in a separate bowl. Add plain yoghurt and vanilla yoghurt. Add melted, warm margarine and butter and mix until smooth.

Divide the dough among the molds (fill the cavities about 3/4 full). Bake for about 25 minutes, until the top is lightly browned and a toothpick comes out clean.

07

Let it rest and serve

Leave it in the mold for 5 minutes, then put it on a wire rack and let it cool. You can serve it while it is warm or completely cooled.
