Step-by-Step Method
Prepare the oven and molds
Preheat the oven to 180°C. Place paper capsules in muffin tray or grease very lightly.
Mix the dry ingredients
In a bowl, briefly mix the flour, cornmeal, baking powder, baking soda, brown sugar, ginger, cardamom and salt.
Prepare the wet mixture
In a separate bowl, whisk the mashed banana, buttermilk, honey and melted butter until smooth.
Assemble the dough
Add the wet mixture to the dry ingredients. Mix with a spatula just until the flour disappears; Do not mix too much so that the muffin does not harden.
Add grapes and apple
Gently fold the Sultana raisins and chopped apple into the dough. If you want, you can lightly mix the grapes with 1 teaspoon of flour and add them.
Portion
Share the dough equally among the molds. Leave the bowls about 2/3 full so it rises nicely.
Bake
Bake for 25 minutes. If the toothpick comes out clean or with a few crumbs when you insert it, it means it's done.
Let rest and serve
Leave it on the tray for 5 minutes, then transfer it to the wire rack. You can serve it while it is warm and store it in a closed container when it cools completely.
