Step-by-Step Method
Prepare the oven and mold
Set the oven to 170-180 degrees fanless mode and start heating. Grease the loaf cake mold well with butter or oil, lightly sprinkle the bottom and sides with granulated sugar and shake off the excess sugar.
Mash the bananas
Place ripe bananas in a large mixing bowl. Mash it with a fork or masher until it reaches the consistency of puree. If you wish, you can cut the bananas into several pieces and blend them.
Add dry ingredients
Add flour, cinnamon, baking powder, baking soda and vanilla if you are using it, to the banana puree. Gently mix the dry ingredients with the banana to obtain a homogeneous mixture.
Beat eggs, sugar and butter
In a separate bowl, beat the eggs, granulated sugar and melted and warmed butter with a mixer or wire whisk until the sugar is largely dissolved.
Add the liquid mixture to the banana mixture
Transfer the egg mixture you prepared onto the banana and flour mixture. Gently mix the ingredients with a spatula or whisk just enough to combine.
Add chocolate chips and walnuts
Add chocolate chips and chopped walnuts to the dough. Mix briefly so that the ingredients are evenly distributed, be careful not to beat too much.
Pour the mixture into the mold and prepare the topping.
Pour the cake mixture into the greased and sugar-sprinkled loaf tin. Smooth the surface with a spatula. If you want, place the banana slices that you cut in half lengthwise on it.
Bake the banana bread
Place the mold on the middle shelf of your preheated oven. Cook in a controlled manner for about 50 minutes, until the inside is cooked through. When you insert a toothpick, it should come out clean.
Let it rest and serve
Take the cooked banana bread out of the oven and let it rest in its mold for 10-15 minutes. Then carefully remove it from the mold, slice it and serve it when it has cooled down completely.
