Step-by-Step Method
Preheat the oven and prepare the pan
Set the oven to 170-180°C without fan and preheat. Grease a loaf pan with butter or oil, then sprinkle a thin layer of sugar on the base and sides and shake off any excess.
Mash the bananas
Place the ripe bananas in a large mixing bowl. Mash them with a fork or potato masher until smooth. You can also roughly chop and pulse them in a food processor.
Combine dry ingredients
Add flour, cinnamon, baking powder, baking soda and vanilla, if using, to the mashed bananas. Gently stir until the dry ingredients are evenly distributed.
Beat eggs, sugar and butter
In a separate bowl whisk together the eggs, granulated sugar and melted, slightly cooled butter until the mixture looks combined and the sugar mostly dissolves.
Mix wet and banana mixture
Pour the egg mixture over the banana and flour mixture. Fold with a spatula or whisk just until everything comes together without overmixing.
Add chocolate chips and walnuts
Stir in the chocolate chips and chopped walnuts. Mix briefly so that the additions are spread evenly through the batter.
Fill the pan and add topping
Transfer the batter into the prepared loaf pan and smooth the top with a spatula. If you like, place the halved banana slices on top, cut side up.
Bake the banana bread
Put the pan on the middle rack of the preheated oven. Bake for about 50 minutes, until the loaf is cooked through and a toothpick inserted into the center comes out clean.
Cool and slice for serving
Remove the banana bread from the oven and let it rest in the pan for 10-15 minutes. Then take it out, cool until just warm and slice to serve.
