For the baked French toast

Low-fat cottage cheese
Skim milk
Granulated sugar
Large egg
Vanilla extract (or vanilla powder)
Day-old sandwich bread or brioche (about 1 inch thick)
A little neutral oil or butter for greasing the dish

Step-by-Step Method

6-step method
01

Preheat and prep the dish

Heat the oven to 350°F (180°C). Lightly grease a medium baking dish so the toast releases easily.

02

Whisk the custard

In a bowl, whisk together cottage cheese, milk, sugar, egg, and vanilla until mostly smooth. If the curds look chunky, whisk a bit longer.

03

Soak the bread

Dip each slice into the mixture. Let it sit for 15–20 seconds per side so it absorbs, but don’t leave it too long or it may fall apart.

04

Arrange and top

Lay the soaked slices in a single layer in the baking dish. Pour any remaining custard over the top.

05

Bake

Bake for about 25 minutes, until the center is set and the top is lightly golden. If it browns too fast, loosely cover with foil near the end.

06

Rest and serve

Let it rest for 2–3 minutes. Serve with cinnamon, fresh fruit, or a light dusting of powdered sugar if you like.
